Mexican Chicken Soup

Ingredients: Gather chicken breasts or thighs, chicken broth, onions, garlic, tomatoes, carrots, celery, bell peppers, corn, black beans, lime, cilantro, cumin, chili powder, salt, and pepper.

Preparation: Dice onions, mince garlic, and chop tomatoes, carrots, celery, and bell peppers.

Cooking Chicken: Cook chicken in a pot until no longer pink. Remove, shred, and set aside.

Sautéing Aromatics: Sauté onions and garlic in the same pot until softened, then add tomatoes and cook until they release their juices.

Simmering Soup: Add chicken broth, shredded chicken, chopped vegetables, drained black beans, corn, and seasonings to the pot. Simmer until vegetables are tender.

Finishing Touches: Stir in fresh lime juice and chopped cilantro. Adjust seasoning with salt and pepper to taste before serving hot with tortilla strips or avocado slices.
